Ingredients 125g, (4oz) margarine or butter at room temperature 175g (6oz) self raising flour 1 teaspoon baking powder 175g, (6oz) caster sugar 2 large eggs 4 tablespoons milk Finely grated rind of 1 lemon Icing Juice of 1 lemon mixed with 125g (4oz) granulated sugar
Method Put all the ingredients into a blender, whiz together for 10 seconds. Wipe down the sides and whiz again for another 10 seconds. Alternatively put all ingredients into a bowl and mix until creamy. Pour into a sandwich tin and cook for 25 minutes. Leave to cool in the tin for 5 minutes. Pour over the icing and leave to set. You can use different shape cutters or just cut into squares. Oven temperature 350°F, 180°C gas mark 4 Cooking time 25 minutes Sandwich dish @ 12inches by 4inches
