Caras Spanish Rice.

Cara's Spanish Rice

Cara is a young lady I met when I spent some time in Spain. She lives in a small mountain village called Sedella.When I was there I was lucky enough to have a tapas cookery lesson with Cara and her grandad Neil. I love this recipe and I'm sure you will too. Thanks Cara.

1 tablespoon olive oil
70g (3oz) Serrano ham, cut into strips, or any ham you choose will do
1 large onion peeled and finely diced
1 green pepper diced
300g (10oz) rice cooked according to packet instructions
1 teaspoon garlic puree
100g (3 1/2 oz) Manchego cheese, grated (a delicious Spanish cheese but you can use any cheese you like)
2 x 400g (14oz) tinned chopped tomatoes
salt and pepper to taste

Method
1. Pre-heat the oven to 180C (190F, gas mark 5). Lightly grease with butter an 20cm (8inch) round or square ovenproof dish.
cara.jpg2. In a large frying pan heat the oil, add the onion, garlic puree, and peppers and cook over a medium heat for about 5 minutes.
3. Add the chopped tomatoes and ham and cook for about 10 minutes.
4. Stir in the cooked rice and pour into the prepared dish. Sprinkle with cheese and bake in the preheated oven for 20 minutes. Serve and enjoy the Spanish way.
